With the opening date of the One Chamberlain Square venue just around corner, those who want to be in prime position, first through the doors are now able to make a booking.
With two Bristol venues under its belt already Cow & Sow has been setting the bar high already with its offering of top quality steak
At Cow & Sow, the star of the show is undoubtedly the steak. Sourced from the finest South West farms, the beef is aged to perfection and sourced from expert butchers to ensure every bite is tender and flavourful. The menu will feature an array of prime aged steaks, from single cuts to exceptional sharing steaks from grass-fed cattle alongside delicious sides & small plates to start. Indulge in specialty steaks from the chophouse including flat iron, sirloin, ribeye and fillet steaks – all 35-day aged. A must try accompaniment is the signature crispy onion blossom with black garlic dip.
Taking the helm will be General Manager, Jordan Stewart, who has previously worked at Birmingham’s Hotel Du Vin and several other of the city’s prestigious venues.
Jordan said: “I’m incredibly proud to be heading up this exciting brand in Birmingham – it’s a fantastic opportunity for me. We are in good company here in Paradise with several other great brands as our neighbours.”
This new independent will offer an exhalted culinary experience in a contemporary yet premium setting. Expect open kitchens, a beautiful bar and a private dining area perfect for the local business community and intimate dining experiences.
As the name suggests, there are plenty of delicious alternatives to steak including the pulled pork burger and cider-braised pork belly. Vegans will love the grilled smoky maple glazed cauliflower steak and the butternut squash wellington
For those who make it to dessert, a carefully curated range of indulgent sweet treats is available including the signature salty dark chocolate delice with a zesty mandarin gel for added freshness and tangerine crisps. Other options include salted caramel tart with honeycomb and vanilla ice cream, Affogato, burnt Basque cheesecake and caramelised pineapple.
The extensive wine list features Cow & Sow’s very own Malbec – the perfect pairing to compliment the melt in the mouth meat. Those who prefer a cocktail will enjoy the choice of exquisite blends such as the Sow Punch with Aluna coconut rum, pineapple, orange, cranberry and the Cow and Sour, a mix of Amaretto, bourbon, lemon juice, syrup and cherry.
With two original sites in Bristol, founder Mark Warburton was determined to open his third restaurant in Birmingham, and admits he jumped at the chance when he was offered the space at Paradise. “It’s been my dream to expand outside of Bristol and I’ve had Birmingham in my sights for a long time.
“I’m thrilled to be opening in Paradise and can’t wait to showcase what we have to offer to the people of Birmingham. The city has a thriving dining scene but I’m confident that Cow & Sow will prove ourselves to be a cut above.”
Having been brought up above a country pub, Mark has been living and breathing hospitality since he was a child. His parents and grandparents ran pubs and his uncle has his own Bristol brewery – hospitality is undoubtedly in the blood.
Another ground-breaking development, is that the company are now certified B Corp™, Mark says:
“When I launched Cow & Sow three years ago I wanted to build a brand to be proud of and to take the teams on an exciting and purposeful journey.
“For me, this had to be through B Corp™. As a steak restaurant business it would be a tough ask but I knew we were doing great things by the people and planet. We were engaging with suppliers, ensuring provenance and sustainability of our product. As a team we collectively review our environmental impact and share ideas to reduce our carbon footprint in all manner of areas. This was always more than just a steak restaurant brand and I wanted to start as I meant to go on and continually strive to be a force for good.
“I see this milestone as a door opening. The real work starts now! We pledge to put purpose before profit, but B Corp™ demands that you continue to do so and continually strive to do better.”
Cow & Sow opens on Monday 2nd December in Paradise next to Dishoom, F1 Arcade, Albert’s Schloss, Big Mamma Group and Rosa Thai. Book your table here
